Simple One-Pot Cheesy Chicken Rice

Do you ever find yourself having no idea what to cook for the next meal? Or do you need to make something really quick? Well, look no further. Here is a Simple One-pot Cheesy Chicken Rice recipe that’s simple and delicious!

It has a perfect ratio of chicken, rice, and flavor from all the seasonings and cheese.

Simple One-pot Cheesy Chicken Rice

Ingredients:

  • 3 cups chopped chicken*
  • 4 tbsp bacon fat (or butter)
  • Half of onion, diced
  • 4 cloves of garlic, minced
  • 1/2 tsp pepper
  • 2 tsp salt
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 3 cup chicken broth
  • 1 cup jasmine rice 
  • ¾ cup parmesan cheese*

Instructions:

 Let the bacon fat heat up, then add the onion and cook for 2 minutes on medium heat. Add the garlic and cook for another minute.

Add the rice and seasonings, stirring a couple of times. Put the cover on and simmer on low heat for 10-15 minutes. 

Simple One-pot Cheesy Chicken Rice

Once the rice is cooked, add the chicken and parmesan cheese, and stir. Put the cover on again, turn off the heat and let it melt into the rice for 5 minutes.

 Take a big ol’ serving and add more cheese.

Notes: 

  • I like to use chicken I have already cooked in the fridge from a previous night for this. It makes it a lot easier for a recipe.
  •  You can use either fresh or grated parmesan cheese. The fresh will give it a stretch and also a sharper taste. Or, of course, you could use both; there is never enough cheese.
  • I also sometimes like to add spinach at the end.
  • I like to use bacon fat because it’s flavorful and adds so much to a dish. But of course, since you’re only using the oil to cook the onions, feel free to use any oil you like!
