Do you ever find yourself having no idea what to cook for the next meal? Or do you need to make something really quick? Well, look no further. Here is a Simple One-pot Cheesy Chicken Rice recipe that’s simple and delicious!
It has a perfect ratio of chicken, rice, and flavor from all the seasonings and cheese.
Ingredients:
- 3 cups chopped chicken*
- 4 tbsp bacon fat (or butter)
- Half of onion, diced
- 4 cloves of garlic, minced
- 1/2 tsp pepper
- 2 tsp salt
- 2 tsp garlic powder
- 2 tsp onion powder
- 3 cup chicken broth
- 1 cup jasmine rice
- ¾ cup parmesan cheese*
Instructions:
Let the bacon fat heat up, then add the onion and cook for 2 minutes on medium heat. Add the garlic and cook for another minute.
Add the rice and seasonings, stirring a couple of times. Put the cover on and simmer on low heat for 10-15 minutes.
Once the rice is cooked, add the chicken and parmesan cheese, and stir. Put the cover on again, turn off the heat and let it melt into the rice for 5 minutes.
Take a big ol’ serving and add more cheese.
Notes:
- I like to use chicken I have already cooked in the fridge from a previous night for this. It makes it a lot easier for a recipe.
- You can use either fresh or grated parmesan cheese. The fresh will give it a stretch and also a sharper taste. Or, of course, you could use both; there is never enough cheese.
- I also sometimes like to add spinach at the end.
- I like to use bacon fat because it’s flavorful and adds so much to a dish. But of course, since you’re only using the oil to cook the onions, feel free to use any oil you like!
