Chewiest and Easy Molasses Cookies

These are the best and chewiest molasses cookies I’ve ever had. They are so good and I will always keep making them. They’re not just soft, but chewy and full of spice. Something else about these amazing cookies, is that there aren’t that many ingredients. They are all basic ones except the molasses, which is pretty easy to find in stores

Ingredients:

¾ (12 Tbsp)  cup butter or coconut oil

1 cup white granulated sugar

8 Tbsp dark molasses

1 egg

2 cup flour

1 tsp baking soda

1 ½  tsp cinnamon 

1 tsp cloves

Instructions:

Set oven at 350 degrees

In a medium bowl cream the butter and sugar together till fluffy. Then, add all the other ingredients and mix well, make sure to not overmix.

Shape the dough into a ball, about the size of a walnut and dip in sugar. Place on an ungreased baking sheet, press them down and bake for 8-10 minutes. They will still look a little raw, but they aren’t. Let sit on the pan for 1-2 minutes, then move them to a cooling rack.

Tips:

  • For the cookies to be chewy, they need to spread, so do not put them in the fridge

What exactly is molasses?

Molasses is the juice extracted from the sugar cane. It is then cooked either one, two or three times to get different kinds. The reason dark molasses is used in this recipe, is because you’d want a strong and deep flavor of molasses for these cookies.
