Making healthy Marshmallows + recipe!

For a while, marshmallows were on my list to make. My sister put the idea in my head and sent me a couple of recipes! But I haven’t tried to make them till now. I’ve always had the notion that they’d be hard and complicated. 

But that is not the case at all! My KitchenAid did most of the work and I just stood back and watched it do its magic. 

Compared to the store-bought marshmallows, these are simple and have few ingredients. Clean and healthy ingredients too! The texture is different but still can pass for a “marshmellow”.

  • Gelatine (I used grass-fed) 
  • Honey
  • Water

The Process:

First, I combined the gelatine and water to let it bloom. I used a random bowl, but later I realized I should have used my KitchenAid bowl instead. So when you mix the gelatine mixture, use your mixer bowl, so you don’t need to dirty another bowl.

While it bloomed, I made my honey mixture! Added some water, raw honey, vanilla extract, and a pinch of salt. Whisked it continually as it boiled on medium-high heat.

Once that boiled, I took it off the heat and started whipping the gelatine mixture. Get it going and then started adding the honey mixture into the gelatine. 

Start at a lower speed, but gradually speed it up. I landed on speed 8 for about 10 minutes. It turned all white and foamy and surprisingly kind of smelled like marshmallows. 

While everything was whipping, I prepared my pan. You want to do it then because the marshmallow will set very quickly. Line the pan with parchment paper and what I did was set some apple sauce jars to flatten it all out. 

Once the mixture is all foamy and white, pour it into the pan and smoothen out. Set for 2-3 hours then cut into preferred size. 

As you see, super easy!

Final Thoughts:

In general, these are pretty bland and don’t have a marshmallow sweetness. But, if you were to use them with other flavors (like s’mores), they’d be perfect!

The texture IS different than store-bought, so keep that in mind. I will experiment with different amounts of gelatine to see how that makes a difference.

I made Rice Krispie squares with these marshmallows, but they turned out soggy. I don’t know if it was the cereal or the mellow.

Overall, they’re pretty good, especially if you’re picky about your marshmallow ingredients. It’s a very basic recipe, which gives lots of room for experimentation! 

Notes:

At least have a hand mixer to make these, It took about 10 minutes with my Kitchenaid. If you think whipping whipped cream is hard by hand, these would be 10x harder to whip!.

This recipe makes a lot! I made a pan of rice krispies ( 10oz, about half of a 9×13 pan), and had 2 quarter jars full of them!
