Quick and Simple Meatloaves in a Muffin Pan

Do you need to make something in a jiffy that’s delicious and simple? These mini meatloaves (with a gluten-free option) are a perfect solution. It takes no more than 5 minutes to prep and cooking them only takes 15 minutes at the most. 

I love making food fun to eat and making it just a little different, without changing the taste too much. Some time ago, I was wanting to make meatloaf for dinner. But wanted to make it a little different. If you think about it, meatloaf is literally a loaf of meat. It’s not very fun to eat and quite boring. 

So I decided why not try and make them small and cute? I went online to find inspiration and see what temperatures and times were used.

I made the meat mixture, got my mini muffin tin, and filled them up.

They came out delicious! Now, they are one of my go-to meals when time is short. I love to pair it with mashed potatoes or oven-baked french fries.

Ingredients:

  • 1 lb ground beef
  • ⅛ c (2 Tbsp) bread crumbs
  • 4 Tbsp minced onion
  • 2 Tbsp ketchup
  • 1 Tbsp Italian dressing
  • 1 ½ tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp pepper

Instructions:

Preheat the oven to 350 degrees and grease a mini muffin tin, set aside

In a bowl, add the ground beef and all the other ingredients; give it a good mix

Take about a tablespoon full of the mixture and put it in the prepared pan. Depending on how big you make them, it should make about 20-24 mini meatloaves.

Cook for 10-15 minutes

Notes:

  • The only thing that makes this recipe not gluten-free is the bread crumbs. So you could replace it with gluten-free bread crumbs or don’t put any in

    Yum! I am going to try and make these. I am not a good meatball maker and these look easier and tasty.
