Banana muffins are one of the best kinds of muffins there are! This recipe makes the best banana muffins I’ve ever made and ever had. It is also basically the same recipe I grew up with, so maybe I’m a bit biased toward this. But, try them and see for yourself!
The muffin is so soft on the inside, not too banana-y, but just right. These are one thing that will get eaten super quickly in the house. Everyone loves them! I try to make some every month; I leave some out and then put some in the freezer.
Here is the best banana muffin recipe:
Ingredients:
1 cup mashed banana
½ cup brown sugar
½ cup water
½ cup oil
2 eggs
1 ¾ all-purpose flour
1 tsp baking soda
½ tsp baking powder
¾ tsp salt
Instructions:
Preheat oven to 400 degrees; then grease at least one 12 hole muffin pan. Depending on the size of the muffin pan you may need more.
In a bowl of a stand mixer ( or any other bowl), whisk the eggs just so they’re lightly beaten. Then add the mashed banana, sugar, oil, and water; whisk till combined.
Add the dry ingredients, and with a paddle attachment (or fold with a wooden spoon) mix till altogether.
Notes:
- 1 cup of banana equals about 2-3 whole bananas
- It’s best to let your bananas over ripen for this recipe
- To mash the bananas, I usually put them all in a pie plate and use a potato smasher, works perfectly!
- For the oil, I like to use melted butter, but have also used coconut oil and both ways turn out amazing. If I’m making a giant batch of these, I use some of both.
