Easy Bacon Ranch Chicken

This chicken recipe has been served at the dinner table many times and is always a hit! Bacon Ranch Chicken combines three different elements that complement each other and are all delicious! 

Easy Bacon Ranch Chicken

This is a super easy recipe, literally dump everything in a bowl, and you’re halfway there!

Ingredients:

Chicken:

  • 6 chicken thighs (I used boneless and skinless)
  • ½ cup Ranch dressing
  • ⅓ cup sour cream
  • 2 Tbsp mayo
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ cup plus more for sprinkling bread crumbs (optional)
  • ½ cup, plus more for sprinkling, shredded cheddar cheese

Simple Cheese Sauce:

  • ¼ cup butter or bacon fat 
  • ¼ cup red onions, chopped very finely
  • 2 Tbsp flour
  • Salt and Pepper to taste
  • ½ cup broth
  • 1 cup milk 
  • ½ cup shredded cheddar cheese 
  • 3 -4 pieces of bacon

Instructions:

Preheat the oven to 375 degrees, cover a pan with tin foil and grease it, then set aside.

In a bowl, add the chicken and all of the other ingredients. Mix till all of the chicken is coated, it should be very creamy.

Put the chicken on the prepared pan and put it into the preheated oven for 15-20 minutes. Once cooked, it should reach at least 165 degrees inside the chicken. At the 15 minute mark, take out and sprinkle the bacon, cheese, and bread crumbs on top of the chicken. Then put back in to melt.

Another option is to put the cheese on before the chicken is cooked; it’ll get nice and crispy!

While the chicken is cooking, start the sauce. Cook the bacon until crispy, then set onto another plate. Leave the bacon fat in the pan and use it for the sauce. Add the onions, and let cook for one minute. Whisk in the flour and let that cook for a minute. Add the broth and milk slowly, and keep whisking so it doesn’t stick.

Keep whisking until bubbles start forming around the edges. Add the cheese and stir again until all melted. Once melted, set aside.

Notes:

  • Choose your favorite when picking the kind of ranch you use for this recipe. This recipe doesn’t have a super “ranchy” taste, but the kind you use will make a difference. I like to use Litehouse Homestyle Ranch!
  • You don’t need to use tin foil, but it does make aa easier to clean up
  • If you want to make this GF, leave out the bread crumbs or use GF ones. For the sauce, you can replace the flour with arrowroot powder.
  • I love cooking this meal with broccoli and rice, but noodles would also work! Especially if you make the cheese sauce.
