Easy Meatball Rigatoni Casserole
This Easy Meatball Rigatoni Casserole is an excellent dish for a weeknight. It’s easy, quick, and simple, but most importantly, delicious! There are no crazy ingredients; you probably have most of them in your pantry right now!
One thing that’s so great about this dish is that you can make it ahead. Make most of it in the morning and then bake it in time for dinner.
Ingredients:
Sauce:
- 16 oz dried rigatoni pasta
- Jar of tomato sauce (32oz)
- Salt
- Pepper
- Cheddar Cheese
- 1 Small Onion
- Garlic, minced
Meatballs:
- 1 pound ground beef
- ½ – 1 pound of ground sausage
- 2 Tbsp Worcestershire sauce
- Salt
- Pepper
- Onion Powder
- Garlic Powder
- 3 garlic cloves, minced
- 1 egg
Instructions:
Preheat oven to 400 degrees.
Start by cooking the noodles as said on the package. When it is done cooking, drain it and set it to the side.
While the noodles are cooking, heat up an ovenproof dutch oven with a bit of oil. Cook the onions and garlic, then add the sauce. Make sure to season it well. Let the sauce simmer for 20-30 minutes, stirring occasionally.
For the meatballs, mix all of the ingredients. Form and place on a lightly greased baking sheet. Place the sheet in the oven for 15-20 minutes. While they cook, combine the noodles with the sauce. Once the meatballs are done, place them on top and cover with cheese.
Bring the oven down to 375, and place the dutch oven in the oven to melt the cheese.
Serve with more cheese, and enjoy!
Notes:
- If you don’t have an ovenproof dutchoven, cook the sauce in another pan, then transfer to a casserole dish.
- After pouring in the tomato sauce, I like to rinse out the jar with a little bit of milk. Shake it up and pour into the sauce.
