2023 Pi Day:
Happy, happy pi day! Blueberry pies are apparently my go-to for pi day. I made an apple tart one year, but most other pies have been blueberry. I should do something more creative next year.
For this pie, I didn’t use my favorite pie crust. Instead, I tried a new sourdough crust! The first impression was not good. I used discarded started, so it was sourer. But the smell was super sour. So I wasn’t how it would go with the blueberry filling. But in the end, it was good! Not as flakey as my usual crust, but this one had more flavor.
I made the crust the day before to ferment on the counter. After it sat out all day, I plopped it in the fridge overnight. The next day, I took it out a few minutes before rolling. It didn’t roll out too well; pretty sticky and kept tearing apart.
I usually do a lattice top, but I decided to do a blanket top this time. Overall, it was a nice and flavorful pie!
2022 Pi Day:
Here we are once again! This year I went back to a basic pie; good ol’ blueberry! I used my favorite pie crust and unfortunately wasn’t the best pie. It was super juicy, and not too sweet; vanilla ice cream made is delicious, though! But it was a little too lemony, and the blueberries themselves weren’t the ripest.
I used this recipe, but I think I’ll try and wing it next time! There are some things you don’t need a recipe for, and something simple like this is one of those! I’ve been trying to walk away from recipes more, and it’s been really fun! To think of new methods and combinations, to use your imagination! It’s a whole new way of being in the kitchen.
When I made the dough, I didn’t let it sit in the fridge long enough, so it was really soft. Since it was so soft, it made it hard to do a nice edge and lattice top. But oh man, it was the best part of the pie! So flaky, so crispy, and so delicious.
For dinner, I made the classic shepherd’s pie – the dutch oven version! It hit the spot, as always!

Pi Day 2021:
This year I decided to go for an apple tart. I wouldn’t normally do an apple because it seems too much like autumn. But, the tart was different than the normal apple pie I would make. Instead of a bottom and top crust, I only did a bottom crust. It was more like a graham cracker crust than a pastry crust. I decided to go with this kind of crust because I wanted to brown the butter to give it a more intense flavor to the tart.
I sliced up the apples, and tried to get them the same size; I want to try to use a mandolin next time. I covered the apples in cinnamon, sugar, and a squeeze of lemon juice. So tasty, I could just eat that!
Then, I arranged the apples in a spiral/ flower shape, very pretty – I loved how it came out. The taste, the look, and of course, the smell. I will for sure make an apple tart again, but maybe not wait for the next pie day 😉

2020 Pi Day:
Tomorrow is Pi day! Normally I don’t really like math, but pi day is an exception. I like to make March 14th full of pie-themed meals. For sure, there will be pie for dessert; maybe blueberry, raspberry, or perhaps something I’ve never made before. Then may cheeseburger pie or shepherd’s pie for dinner. I plan what I’m going to make a couple of weeks ahead, so I can make sure I’m all prepped.
This year was a bit different, though. I thought about it non-stop but couldn’t think of many kinds of pie. I usually make blueberry, but I wanted something different, plus they aren’t in season. I was browsing Pinterest and saw multiple recipes for a tart. I knew I wanted to do a tart, but again, what kind?
I thought of an apple tart and remembered it was on my list to make. I never wanted to buy a pan “just for one” dessert, but, really, you can use a tart pan for multiple things. So, I went ahead and bought it and planned to make an apple tart for the 2021 pi day!
I’m super excited and can’t wait to share with you all!
Now, what about the other years? What have I made in those years? For some reason, I always tended to make blueberry pies.
I was looking back at my pictures of my pies and realized I only made pies for pi day and Thanksgiving. Maybe I’ll change that up this year 😉
Half of the pie is the crust and unfortunately, I have yet to find the perfect pie crust. There are So many different recipes out there. Maybe it’s how I handle the dough or maybe putting a little too much flour or something. If you have a favorite pie crust recipe, send it my way!
