Easy Coffee Ice Cream

Easy Coffee Ice cream

This easy coffee ice cream is a treat perfect for a hot summer night! Creamy, flavorful, and refreshing! This recipe only uses a few easy ingredients and I’m sure you already have them! the only thing you may not have is instant coffee, but you can get that anywhere.

This recipe does require an ice cream maker; I use the Krups. I have not tested it on anyother ice cream maker but I’m sure it would work!

It’s so simple and you need to try it!

Here it is:

Ingredients:

  • 2 eggs
  • 1 cup whole milk
  • 1 cup heavy whipping cream or whole raw cream
  • ½ cup can sugar
  • 2 Tbsp instant coffee

Instructions:

In a sauce pan, whisk the eggs, add milk and cream; heat till warm. Add instant coffee and sugar; whisk until everything is dissolved.

Keeping it on low/medium heat, constantly whisk for about 10 minutes.

Take the pan off the heat, let sit till cool then transfer to a bowl. Put in the fridge overnight.

Next day, set up ice cream maker and make your ice cream according to the instructions.

Put your ice cream in an air tight container and store in the freezer.

I can’t say how long it will last, because it may not last for even a day. It’s that good!

Notes:

  • This recipe is a two day process. You will make the milk mixture on day one, then make the actual ice cream on day two.

About Me

Welcome to Becky’s Kitchen Corner! I am so happy to see that you are here today. My name is Rebekah, but around here I’m known as Becky. I love to be in the kitchen, cooking and baking up a storm. Though, I don’t like cleaning up the storm as much, ha!

I’m from Pittsburgh and now living in a much sunnier state of North Carolina. I am the youngest of 8 kids and so growing up, I had lots of people to eat up my baked goodies.

In the daytime, I work as a nanny for my sister and brother-in-law to care for my adorable, silly nephew.
