One-pot Lemon Basil Risotto

Lemon Basil Risotto

This Lemon Basil Risotto is a nice summery dinner dish! It’s nice and light but full of flavor. The lemon gives this dish a different flavor with a tang, and the basil brings a nice herbal taste. This is a great recipe that you need to try!

What is risotto?

Risotto is a starchy, short grain rice cooked in broth. That’s the very basic risotto, and it’s a dish that you can basically do anything to. Add vegetables, meat, and anything else you want. Once it’s cooked, it’s creamy and slightly sweet.

Ingredients :

Ground Beef Mixture:

  • Avacado oil
  • 1 small onion
  • 3-4 cloves of garlic
  • 1 green onion
  • 1lb ground beef
  • 1 tbsp lemon juice
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp 21 Seasoning (optional) 

Rice Mixture:

  • Avocado oil
  • 2 cup arborio rice
  • 6-8 cups chicken broth
  • 2 tsp cane sugar
  • 2 Tbsp lemon juice
  • 1 ½  tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 Tbsp dried basil

Instructions:

In a dutch oven (I think I use a 4-quart one), drizzle some avocado oil and heat it up. Add the onions, garlic, green onions, and a sprinkle of salt. Let cook for a few minutes, then add the beef and seasonings. Cook till all browned, then pour out into another bowl.

In the same dutch oven, drizzle some more avocado oil and pour in the rice. Coat it all and let it toast for 1 minute, stirring as it toasts.

Start by adding 1-2 cups of broth at a time, constantly stirring so that it doesn’t stick. This can take up to 30 minutes, so grab a seat and your favorite tunes. 

Add the sugar, lemon, and seasonings. 

You’re ready to add more broth when it “dries” up and becomes thicker as you stir. Add just 1 cup of broth at a time after the initial pour. This will take time, so don’t try and hurry it up.

By 6-7 cups, you can give it a taste. If it’s still chewy or hard, give it another cup of broth. You want it a soft bite. By then, it should be perfect! If you think it needs more lemon flavor, add ½ tsp at a time till your liking.

Add the beef back into the dutch oven, then add the cheese.

Notes:

When cooking the beef, I like to use bacon fat! Adds even more flavor

The 21 seasoning is optional and is from Trader Joe’s
