The Best Strawberry Muffins I’ve ever had

Where do I start? These are the Best strawberry muffins I’ve ever had. Now…they are also the only ones I’ve ever had, but they are so perfect, why find another?  They’re soft, and fluffy, and pure deliciousness. They are full of strawberries, but not too many that would make it soggy.

This is also my first post where I can share another’s work. The reason I want to share it so that other people can enjoy what they create and to promote their amazing work. I was scrolling through Instagram and saw that Jen from ourblessesnestof4 post something about her strawberry bread. I knew I just had to have the recipe. So, I reached out, asked and now I have this amazing recipe to share with you all.

She is actually not a food blogger but makes wooden decor; they’re super cute and creative. Not all amazing recipes need to come from food bloggers. Back in December, I bought a North Carolina ornament for the milestone of moving to NC, and was perfect! The recipe is really for strawberry bread but decided to make them into muffins. Once I made them, they didn’t last long at all! I’ll have some tips down below that I found if you want to make the recipe into muffins.

So, here are the ingredients you’ll need; you can find the full recipe here

3 cup chopped strawberries

1 ⅔ c white sugar

⅔ cup oil

2 tsp vanilla extract

4 eggs

3 cup flour

4 tsp baking powder

1 tsp salt

1 tsp cinnamon (optional) 

Tips for making muffins:

  • It makes about 20-24 muffins depending on the size of the tins.
  • I cooked the muffins for about 25 – 30 minutes (Each oven is different so keep an eye out!)
  • Make sure you grease the muffin pans
  • For the oil. I use coconut oil; it gave an extra bit of flavor. 
  • Recipe calls for mashed strawberries, but I just chopped some up and my mixer squished them in
