Easy Chorizo and Orzo Casserole

Chorizo and orzo are my two new favorite things to combine. The chorizo gives a nice spice and flavor, while the orzo gives a nice starchy texture. The two ingredients complement each perfectly. So here comes this recipe, Easy Chorizo and Orzo Casserole!

You don’t need to make it into a casserole, but baking it in the oven gives the whole dish a level up. Plus, the melty cheese completes it. This dish is super easy to make and should take less than 30 minutes! Perfect for a weeknight meal or maybe a last-minute decision. 

Whatever the reason, you need to try it! 

Ingredients:

  • 2 cups dried orzo
  • 4 cups broth 
  • One small red onion
  • 1 lb chorizo
  • Salt
  • Pepper
  • Paprika 
  • Garlic powder
  • Onion powder
  • Shredded cheddar cheese

Instructions:

In a skillet, add the onion and chorizo. Let cook till fully browned. While the meat is cooking, heat up some oil in an oven-proof dutch oven. Then add the orzo, broth, and seasonings to the pot. On high heat and with the cover on, boil. Once boiled, turn down to medium heat and cook for 13-15 minutes. All the liquid should be gone, and the orzo should be expanded. You can also taste test some; if it’s still hard, cook for a few more minutes. It should be soft but not mushy.

Combine the chorizo in the dutch oven and mix together. Add some cheese and toss into the oven for 15-20 minutes. If you want to skip the oven part, you can.

Take a nice spoonful and enjoy!

Notes:

  • I like to use chicken broth for cooking the orzo, but you can use any or just water.
  • I like to use beef chorizo.
  • Why are there no measurements by the seasonings? Most of the time because I don’t measure out seasonings when I’m cooking, even testing a recipe. Unless it does need a specific amount. Everyone has different tastes, so that’s why I like just to list the seasonings I use. It’s safe to use 1 tsp for the majority and ½ tsp for black pepper. I also want to encourage my fellow cooks to try and not go by the recipe exactly!
