Easy Pie Crust Croissants

These easy pie crust croissants are flakey and crispy! They’re so easy; just use a simple pie recipe. I’ve tried cinnamon + sugar and apple butter in the middle, and the butter was my favorite. Now, these aren’t exactly like regular croissants. It doesn’t have that butteriness or softness. Everyone always says the crust is the best part of the pie. So, here we are.

Do I need to add a filling?

No, you don’t! There is enough butter in the crust to make it tasty plain. But I like to add apple butter to give it more flavor! I’ve also tried cinnamon + sugar. Other jams or spices would work wonderfully too.

Could I make these a day before serving? 

Yes and no. If you need to make these in advance, I would shape them and stick them into the fridge. When you’re ready, bake and serve. They do lose their flakiness after a day, so they are not good leftovers.

Could I make these gluten-free?

Sure, just use a gluten-free pie crust! You may need to adjust the cooking time.

Here’s the recipe: 

Ingredients:

  • One single pie crust
  • Any filling you want to use (apple butter, cinnamon + sugar, etc.)

Instructions:

Preheat oven to 375. Line a pan with parchment paper or a silicone mat and set aside.

If you’re making homemade dough, make it a couple of hours to a day ahead of time to chill. 

Flour the surface, then roll the dough into a rectangle. Use a pizza cutter or knife to cut triangles. The bigger the triangle, the bigger the croissant. I usually make these into pretty small, two-bite croissants. 

Place on your lined pan and bake in the preheated oven for 15-20 minutes.

Let cool on a wire rack, and then enjoy!

Serve the same day as baking for the best version

Notes:

  • I like to use a pizza cutter, It’s smoother, and I can cut right through the dough. If you use a knife, use a plain edge, not serrated.
